Last Sunday (05.08.2012), we had a port luck gathering at a friend's condo. They have a nice swimming pool with resorts atmosphere. We had many varieties of food since everyone of us bringing our own food. As usual, myself is making the dessert and my contribution will be the Marble Strawberry Yogurt Cupcakes.
I modified the recipe from one of the blogger (http://anglecookbakelove.blogspot.sg) and here you go.
Ingredients
(A)
125g butter
1 cup sugar (80% filled)(about 160g-170g)
(B)
3 eggs
(C) – sift together
2 cups plain flour
2 tsp baking powder
¼ tsp salt
(D)
1 small tub yogurt (125g-150g) + milk = 1 cup OR 1 cup yogurt (either plain or flavoured is fine)
1 tsp lemon juice (optional)
(E)
1 tbsp of cocoa powder mix with 1tbsp of hot water (mix it evenly till the coco powder is dissolved )
Method:
1) Beat (A) till creamy and fluffy.
2) Add (B), one at a time, mix well before each addition.
3) Fold in (C) alternate with (D) in 3 to 4 additions, beat till just incorporated. Do not over mix.
4) Take out some of the batter (about 1/2 bowl) and mix with the (E) coco mixture.
5) Pour the plain batter in the cupcake liners til 3/4 full and put a tsp of the coco batter on top of it. Then use toothpick to swirl the coco batter to get the marble effect.
6) Bake in preheated oven at 170C for 25-30 mins or until a skewer inserted and comes out clean . Cool on wire rack.
