Pineapple Yogurt Cake

It has been a while that I've stopped my posting here as well as baking reason is my maid has gone home and I've no helper to handle my daughter and the house whore. Is been a tough time for me to juggle everything with litte time i have ..sigh. Really tiring. Beside I've been fall sick so easily lately. Probably, my busy schedule and stresses at work...pai mia.

Nevertheless, I still baked when im in the mood. The last time i baked this Pineapple Yogurt Cake was sometime Oct and I promised is really really tasty. The tangy flavour will make you keep on eating it and so hard to stop it. The recipe is so easy, simply follow my recipe of the plain yogurt cake in my last post and add on some fresh pineapple chunck on top of the batter and bake it till it cooks. It tends to have some burning stain on the pineapple but is fine as that is the effect of the caramelised of the natural sugar from the pineapple itself.

15th JUne 2010- Yogurt Butter Cake

I've some leftover plain yogurt and its almost expire!. So I quickly google on the net to find a simple recipe that can utilise the yogurt. Finally, i found this blogger www.cake.bake.love.blogspot.com.


After reading her blog and immediately fall in love with her 'Blueberry Yogurt Buttercake' as it seems so simple and easy to do it. So i decided to make this cake tonite after work.

Since its a weekday and have no time to buy the blueberry, i obmit this from the receipe.

I'm really apprecaite and likes this recipe as its so tasty and healthy. The taste is like a cheese cake !...hmmmm its really delicious. Since, I've made a big cake and feel so proud to share these with my colleagues and boss. All of thme like it so much.

Here's the receipe i got from this blogger .


Ingredients:-

(A)

125gm butter

I cup sugar

(B)

3 eggs

(C)sift together

2 cups plain flour

2tsp baking powder

1/2 tsp salt

(D)

I cup yogourt + 1 tsp lemon juice


Method:-

1) Beat (A) till creamy & fluffy.


2) Add (B) once at a time, mix well before each addition.


3) Fold in (C) alternate with (D) in 3-4 additions. beat till just incorporated. Do not overmix.


4) Bake in preheated oven at 180C for 50-60 mins or until a skewer inserted and comes out clean. Cool on wire rack.


Hope u all will give a try as i think nobody can resist the tasty yogurt cake...





Cinnamon Bun

It has been a busy month for July as my assistant has resigned and I need to cover her work for time being. Beside this, July is our company financial year and everyone are rushing to meet the sales target and year end stock take. I've been going thru this momentum with the same company for 13 years..
Every time reach home, i feel so tired and really have no time to update my blog. Nevertheless, I never give up my baking pratice over the weekend.
Here is my first trial baking Cinnamon bun. Since I've been follow www.dailydelicious.blogspot.com and realised her detailed method is really workable and i seems successful most of the time i follow her receipe. Same for this Cinnamon bun recipe, I modified one of her receipe call Almond and Apricot Chelsea bun. This Cinnamon bun taste really good, soft and i really enjoying the smell of the cinnamon...i should have put more cinnamon powder in it..

To cut short my long winded blog, here's the modified recipe.

Ingredients for dough :-
225gm breadflour
7gm instant yeast
1/2 tsp salt
25gm sugar
100ml warm milk
25ml water
1 small egg
25gm butter, melted and keep some for greasing

Ingredients for filling:
13gm softened butter or margerine
10gm sugar
2tbsp honey
2tbsp cinammon powder
1/4 cup brown sugar

Method:-
1. Put the flour, yeast, sugar and slat into a large mixing bowl & mix well. Make a well in the centre and pour warm milk, water beaten egg & melted butter (i mix all of these in a jug & pour them all at once).

2. Using the dough hook on medium speed, mix everything together to form a dough. If the dough is too dry, add a little more warm water. If is too wet, add more flour. Knead until the dough becomes smooth & springy about 5- 7mins.

3. Take the dough out of the bowl & shape it into a ball on a floured surface. Transfer to a clean lightly greased bowl and cover loosely with a clean damp tea towel. Leave in a warm place to let it proof to doubled size , about 1 hour.

4. Preheat oven to 180C, greased a 18cm cake tin.

5. Take the risen dough out, punch out the excess gas from the dough. Take out on a lightly floured surface and knead a few seconds.

6. Roll out the tough to a roughly 20x30 cm rectangle, spread the butter evenly over the dough. Then sprinkle the cinnamon powder & brown sugar. Roll up firmly like a swiss roll. Cut into even slices with a sharp knife, shapw into 8 round pinwheels. Then arrange in the tin.

7. Cover with clean damp tea towel, prove for about 20mins (about double in size).

8. Bake the buns for 10mins, then lower the temperature to 160C and cook for 10mins until golden brown.

9. Melt the honey with 1tbsp warm water, brush all over the buns to set the moisture of the bun, when served.

NO Bake Chocolate Cheese Cake

This is a rush day for me as I just invited to have a dinner on 23.06.2010 to celebrate a belated birthday of my friend. Since is so rush, I have to do something that fast & easy. So i found this recipe from 'All Recipes'. Simply made a few Chocolate Cheesecake in a cup. Below is the balance of the ingredients and I just pour it in my heartshape bowl like this....





The texture is very rich and honestly is not bad at all... So, i done this up within an hour..Luckily, I've standby biscuits crumb in my kitchen so is rather handy whenever i need it. Anyway, hope my friend will like it ..


Recipe as follow:-


150gm of biscuits crumb (either digestive or shortbread biscuits)


45gm butter


100gm castor sugar (melted)


120ml whipping cream


150gm drak chocolate, melted and cooled


2tbps of cocoa powder and mix well with a little hot water


1 tub (200gm) cream cheese



1) Mixed the crushed biscuit crumbs with the melted butter until well and add in 1tbsp of castor sugar. Put into the papercup and use the spoon to make the suface smooth. Leave in the refrigerator for 30mins.


2) Whipped cream until soft peak and mix in the cooled chocolate and cocoa powder. Blend well and set aside.


3) Whisk the cream cheese and remaining sugar , fold in the mixed chocolate cream and mix thoroughly.


4) Pour the chocolate cream cheese into the cup and chill it in the fridge till its firm.



Mango Mousse Cake with Sponge Fingers

18th June 2010,

This day is my friend's birthday and she have organised a party at Neway karaoke. Well, I didn't expect she request me to make a cake for her instead of giving her a present. The moment i know about this, I was so stressful as I never do a cake for outsider. I mean a complete big cake for birthday occassion. I only did it for family members..Although, i feel stressful but I willing to take the challenge. So, i tell myself i must make it and overcome this 1st step.

I've taken 3 days to prepared . I bought the ingredients on 1st day, then 2nd day baked the sponge cake, prepare the mousse etc..and chilled the cake. 3rd day, take 1/2 day leave from work, prepare for the decoration as well as my emotion to get ready for the nite..

Here it comes...my mango mousse cake ..!!! Well, although is not that beautiful but i can tell you is really tasty and is purely homemade. Using the freshest ingredients to make tis up.

Im glad that my fren and others like the cake...the mango taste is so strong ..is delicious..

In fact, I have so many ideas to decorate the cake but just lack of ingredients at home and still lack of the skill to make it nice..

Since this mango mousse cake is so delicious, I will be proud to share the recipe as follow which I adapt it from dailydelicious blogger (http://dailydelicious.blogspot.com/) and HHB (http://happyhomebaking.blogspot.com/). I mix & match their recipes as follow.


Mango Mousse:-

400gm fresh mango

25ml lemon juice

80gm sugar

10gm gelatine powders

240gm yogurt (im using the Nestle mango yogurt)

230ml whipping cream

Method:
1) Bloom the gelatine. Mix the mango and lemon juice in the blender & blend it.

2) Pour mixture into a pan and mix in the sugar. Cook until the sugar is melt.

3) Put the gelatine into the mango mixture and stir until smooth, let the mixture cool at room temperature.

4) When its cooled, pour in the yogurt and mix it well.

5) Whisk the whipping cream till soft peak and fold in the mango mixture.

6) Pour over the cake and keep in the refrigerator for overnite.

Recipe for Sponge cake (20cm round pan):

4 large eggs (room temp)

100gm castor sugar

4g salt

140gm cake flour (sift it)

30gm salad oil ( I used melted margerine/butter)

30gm fresh milk

Method:
1) Whisk the egg and sugar till double in volumn and ribbon-like.

2) Add sifted cake flour into the batter, and gently fold it till is well blended.

3) Use a spatula, mix 1/3 of the batter with the oil in a separate bowl . Then pour back the mixture into the batter and fold it well (this method is to ensure the oil is well blended with the batter).

4) Add in fresh milk and mix it gently.

5) Pour it into pan and bake it for 35mins or until the skewer inserted in the center and come out clean .

6) Unmould and cool it.

7) When it cooled, put the cake into the ring type pan, assemble the sponge fingers around the cake. Then, pour in the mousse and keep in the refrigerator.

I've boon looking for such page/online store for quite sometime and honestly is not easy to be able to find a good one like Lollytot locally in Malaysia. Their dresses, accessories are beautiful and most importantly , the prices are quite reasonable too.
We are a working mother who really do not have much time to shop around and with this online store is really helps and save a lot of time .

My 2nd attempt bread baking - Delicious Mini Milk Bread

Hello friends...guess what, I finally makie it ! Yes I did it!. After the last failure on breadmaking, i never give up. I found another recipe from a blogger and with her detailed steps and easy ingredients, I finally managed to made the bread succesfully.

The texture of the bread is so fluffy, the mini size make it look cute. My daughter is so tempted to try it after she seen it out from the oven...so happy now.

11.05.2010- My first homemade bread


Hmm...im not sure whether you all have this sudden mood to bake cake or bread? Myself do have such sudden moon which rather scary..especially to my maid cos she need to help out the washing part when im done ..hahaha.

As i said sudden mood..so this happen on Wednesday and i tried to make a bread and with no surprise, my bread is a total failured one. The bread is not fluffy and with strong yeast smell.

Sigh..so sad..

After google the bread problems, i reckon the following issues that caused the failure.

1) Recipe might have error - too much of yeast
2) Kneading time is not enough. As per other blogger, the kneading time at least 25mins.
3) Undercooked the bread . My oven temperature needs to be reviewed again.
4) Oven temp too hot and cos the bread gets brown quickly and the inner texture is not fully rose.

After knowing the above problems, i will give a try again. I've set in my mind that i must successful in bread making..worst scenario, invest a breadmaker...hahaha

Cameron Trip with Neighbourhood


Saturday ,08.05.2010 @ 2pm
Our neighbourhood (4 chinese couples including ourself) has make a trip to Cameron Highland for a nite stay. This is our first gathering and certainly bring all of us closer to each other.

We reached Cameron at 7pm and we went to Brinchang nite market to buy the vegetables for our steamboat. Well, as usual when we reach nite market you can resist the food there and everyone are eating the food sell at the roadside. Nevertheless, we still keep our plan happening and continue our steamboat in our rented apartment at around 10pm. This is the latest steamboat dinner that i ever had in my life. As you can imagine, how can our stomach fill up the steamboat stuff since we ate something at the market. So, we continue our steamboat session in the morning for our b'fast. Again, this is another new b'fast that i ever had in my life.

After our heavy steamboat b'fast around 12pm, we checked out and proceed to morning market for our veg shopping.

During this trip, my observation on our neighbourhood as follow.

1) Choo & Yoke Yin - Choo is a very humouros guy and he can easily make everyone laugh and is good to have him in the group . Yoke Yin is a very gentle and quiet lady . She do not easily open up herself to stranger.

2) Melissa & Sunny- both of them can talk alot if they want. Melissa is a very particular lady on cleanliness surrounding her. She is a very hardworking lady and she prepared most of steamboat stuff for us. Sunny is consider a talkative one among the men. He is not inborn with humorous character but he is good in entertaining everyone with all kind of subjects.

3) Lim & Agnes - Agnes is older than Lim of 5yrs. These couple do not talk alot, especially Lim.

He is a bit ego type cos i realised he don't look at your eye when he talk to you (with lady only).
He can be very friendly with guys but not ladies. Well, probably is a good sign so the ladies will not easily attach to him. I think Agnes has a strong character during working time as she need to handle 7 staffs under her. Usually a lady strong at work, she likes to be a little cat (siu nu ren) at home and let all the decision to be made by her partner That's why she can bear Lim's ego character..

Thats all about how i observed everyone in this trip, overall they are great and looking forward to have 2nd trip. Hmm...would suggest a better planning on second trip especially time management as this 1st trip is rather poor one...kekeke

Picnic at TTDI Park

We woke up early this morning and prepared ourself to go TTDI Park for picnic. This is the 1st time we been there and we all really like the place. Fresh air, many trees around, playground for the kids, clean & nice jogging track..most wonderful part is the small water stream from the hill. The kids had so much fun there catching small fishes, water and sand. Is really a very nice garden for city folks like us. I mean...there are many garden around us but this one is rather special and attractive.

Is a bit far for us who stayed in Shah Alam to go TTDI but i still think is worth to go once in a while..

When we are about to go home, the kids were asking when are we coming again??? They look so sad and worry that our next trip would be another year kind of thing. Well, in order to cheers them up I said anytime since is not that far..

Xinyi 2 years old birthday


Her actual day is 26th April and we celebrate it for her on 24th April so everybody can enjoy the nite till late since is Saturday.


I challenged myself to make this strawberry mousse jelly cake. Overall, the cake is not so tough to do it but the step of pouring the jelly is bit panic to do it. The cake is very tasty and refreshing, the outlook not too bad but the jelly a bit too soft. Not sure why cos I've been followed the same steps on the instruction label.

Dry Mee Pok Fishball Noodle -S'pore Style

After exploring in the net and finally i found my favarite mee pok recipe and I'm so urge to prepare it since i can't find any in KL. The recipe is showing the DIY sauce which Im really lazy to do it . Luckily, I found another blogger who recommend to use the Dried Shrimp Chili Paste (Tean's Gourmet) which can be easily find it at any local hypermarket. So, obviously I choose the option of the ready made sauce .

I was very happy with the taste and i found out that the most important secret recipe for this noodle is the 'black vinegar'. After putting the black vinegar, the noodle taste is totally different and is so tasty. I love it so much.

Here's the simple ingredients:-
Note: Below is only my estimated measurement, subject to change based on individual tastebud.

Fish balls (estimated 4pcs a bowl)

minced pork (about RM3)
green onion (a stalk)

Cintan dry flat noodle (1pc)



Sauce :

Soy sauce x 3 tsp

Fried lard oil or garlic oil x 1tbsp

black vinegar x 1tbsp

dried shrimp chili oil x 2tsp

white pepper (a bit)


Method:

1) Fried some lard oil or garlic oil & put aside. Cut the green onion and put aside.

2) Boil water and out some 'ikan bilis' to cook some soup. Use small fire to brew the taste of the ikan bilis soup.

3) Sieve the ikan bilis out and put in the fish ball and let it boil till the fish ball is floating to surface. That means the fish ball are cooked.

4) Use a sieve, cook the minced pork in the soup using the sieving method. This will not make the minced pork all over the soup. Once the pork is cooked, put aside.

5) In a separate wok/pot, boil some water and ready to cook the noodle.

6) While waiting for the noodle to cook, prepare the sauce in a bowl.

7) Once the noodle is cooked, toss the noodle and mix it in bowl with the sauce.

8) Serve the noodle with the green onion and some minced pork. A separate bowl of fishball soup.

2nd cakes for my nephew birthday

I have another chance to challenge myself baking a chocolate banana layered cake with chocolate ganache for my nephew's birhday. Since, im very new in decorating big cake and is really not easy for me to frost the cake nicely. I always have problem frosting the side of the cake. Well, as usual will think of a way to hide the ugly part of the cakes. Here's are the 2 cakes i made.

Why 2 cakes? Ya, last minute my sis told me to make one more in case is too nice and not enough for the party. Oh dear..she really hv confident on me. Anyway, luckily the taste of the cake is not so bad but a little bit dry. Probably, i nv cover it probably when i keep in the fridge.

Reason i kept in the fridge is easier to handle when frosting.

06.03.2010-Birthday cake for my husband


Well..this is the 1st time im doing this peach cake for my husband and thank god the cake is really tasty although the look is ugly.

Sorry to say, im still not good on the decoration part and realised is really not easy to frost the cake smoothly..sigh.

Anyway, I will not give up as I found its really interesting and happy to be able to bake a cake for your love one.

07.02.2010 - Cornflake Peanut Butter Cookies


After the failure on the pineapple tarts, i've no choice to make another type of cookies.

Gone through a few blogs and found this recipe which is quite easy and I can imagine its tasty too. So, i decided to do this.

In the recipe, require brown sugar & white sugar. 1've done 1st batch according to the recipe and its really tasty. Is crispy and smells good.

So, I continue for 2nd batch. This round , i omit the white sugar since i wish to cut down some sweetness in it. Guess what, the 2nd batch does not have the crispy testure like 1st batch and I think becos of the white sugar which I've omitted in my 2nd batch. Anyway, the texture is soft type which i think is not bad either.

This cookies is so much easier compared to pineapple tarts. Will definitely do the same cookies in next CNY since peanut butter also a good 'term' in chinese call 'fa sang' = 'fai sang'..hahaha.




06.02.2010 - Saturday / Pineapple tarts


Today, I'm very dissappointed on my pineapple tarts as I forgot to put vanilla and cos the the tarts have the heavy smell of flour which really disgusting. I was so upset with myself due to careless and made such a silly mistake. Anyway, im hoping the smell will go off after sometime.

I've balance pineapple jam, so i made 1/2 batch of the pastry and this time i make it in round shape. The jam is fully wrap by the pastry in round shape. Although, the outlook a abit ugly due to the cracks surface but the taste is much better compared to the failure batch.

I hope, next year i will have the same urge to do pineapple tarts as this time its really make me sick of it..

My conclusion is Pineapple tarts are not easy to make. ..lor

31.01.2010 Sunday- Friendship


Out of sudden, i received a call from my partner and got blame for not answering a call and not returning a missed call. She was rather harsh on the phone which i admit i made a mistake that i should not ignore the missed call as a cupcake seller. But , does she need to be so harsh on the phone? Why she never think she have to bear some responsibilities as well? She can divert the caller to call me, why can't she simply sms me & alert me on her divert call. Then i'll be alert and definitely will not ignore the missed call.


My mind is shut off over the weekend for cupcake supply as i was not feeling well and also my daughter is not feeling well too. Besides, i was thinking we can't accept any cupcake order since my partner is away. She know very well on this that any order must be done by both of us. She never give me chance to explain and never try to understand my situation.

Sometime, i realise she rather blunt to her friends and never try to understand other people's situation. She always think she is right, she always think she is the best, she sacrifice a lot for the biz..etc. Am i always sitting there to share the profit?? I am not, i worked hard too. Did i ever tell around how much i sacrifice. No doubt most deals are done by her that doesn't mean im useless. Why is she so mean to tell me..'i don't expect you to close the deal'! Is really hurt.

After this incident, i realise is not easy to work with her as she always think she is the best ..she always wants to be the winner and demanding.

I'm swear that i never say such a harsh statement to my closed friends becos i do concern how people feel.

Nevertheless, i learned my lesson and know more about this friend of mine. She always said Im her closest friend and yet she never bother my feeling and simply hurt me directly. Is this call closed friend. A closed friend should understand each other and not blaming without understanding..

28.01.2010 (Thursday) Sunway Pyramid




I went to watch this local chinese movie 'Tiger Woohoo' with my family members and this movie really cheers us up. I really feel proud for this movie and they really done a great job. I realised Astro really build a bunch of good DJ cum actors & actress ya.
My feeling on this movie...hmmm its really put a smile on our face from start till end of the show. The whole story is full of kindness, love and 'yan ching mei'. Feel very relaxing and really wish to go back hometown after watching the show. It was really 'NO STRESS' at all..The scenery is nice & calm..good one!

Nevertheless, i hope astro shaw will continue to have more good movies and enchance the industry in Malaysia successfully.

Chinese movie industry in Msia.....woohoooo!!

11.01.2010 - Long & nice chat/ Sweet moment


Is been a while that we have not been chatting so much and it is a great chat. He is really open up himself and allow me to understand him better..I really enjoy the sweet chats between us..

I hope this sweet moment can keep it up as I believed this will enchance our love. I've sms him my feeling and i hope he have the same feeling as me..

I've also share with him about the fortune telling through the numbers in our life and he is so firm that he will not have another woman in his life as he know what is bad and good thing that supposed to do as a husband. Im really glad to hear such feedback and is really gain the confident back to me. He even explained to me why he wants to mixed around with some frens and reasons etc which really reasonable. Sometime, I do agreed i'm a bit bad tempered but is all becos he hardly open up himself to me and makes me feel frustrated.

Nevertheless, i hope we are not too late to improve our relationship and have a better future..

Ham & Cheese Muffin 05.01.2010

After browsing the net for quite sometime and finally found a muffin that using ham & cheese , my favorite. The method is easy!. I'm quite satisfy with the output , the only problem i had was the uneven height of the muffin. Anyway, I will not give up and will definitely give another try.





















Here's the recipe:-


150g x Cake Flour
6g x Baking Powder
1pc x Medium Egg
30g x Sugar
50g x Unsalted Butter (melted)
70g x Milk
1g x Salt (you can ommit this if using the salted butter)
3 slices x Ham (cut into small pcs)
50g x Cheddar Cheese (cut into small dice)
Parsley (chopped)



Preheat Ove to 180C
Place the cupcake liners into the pans
Sift flour, baking powder and salt together, set aside
Put the egg and suagr in a bowl and place the bowl over the pan of hot water
With hand mixer beat the gg mixture using spatula fold to combine, then add the melted butter and fold again.
Pour all the rest ingredients (flour mixture, ham, cheese and parsley) fold just until they incorporate (do not overmix)
Pour the batter into cupcake liners.
Bake for 25mins or lightly browned and a toothpick inserted in the middle comes out clean.

Kampung lifestyle 30.12.2009~03.01.2010


I went back to my husband's hometown, a small village at Sg Petani surronding with padi field. Previously, i went home with him i feel time passed really slow and boring there. This time, i feel so much different with our daughter along. Now, she can walk & run easily so we can play a lot of things with her..

We let her try on to fly the kite and we also bring her to waterfall to feel the cold water..she enjoyed it so much. Although she sometime a bit naughty but overall we still love her a lot..hahaha. Especially my husband, he really have the patience to handle her.
We supposed to visit our father who admitted hospital to check his liver, but the operation has to drop off as my father in law's blood pressure is too high to proceed the opeartion. Hence, no choice to discharged from hospital on 31st Dec and reschedule the operation next week on 07th Jan 2010. We hope nothing serious on his liver and can just simply take medicine to subside it.
